Abstract:

In this study, two types of plasticizers (glycerol and oleic) and ethyl-Na-dodecanoyl-L-arginate hydrochloride (LAE) were incorporated into zein-based films in order to evaluate antimicrobial properties for the design of active food packaging. Release of the antimicrobial, was characterized by exposing the active bio-films to three food simulants (water, 3% acetic acid, and 10 % alcohol) at two temperatures (4, and 37 °C). The data obtained revealed that the release of LAE from active zein film with oleic acid to all studied food stimulants was significantly less than active zein film glycerol. Antibacterial activity of active zein films was assayed against greater antibacterial activity was observed with zein films containing 10 % LAE and glycerol (5 log reduction) against Listeria monocytogenes and Escherichia coli at 37 °C, whereas antibacterial activity of active zein films with oleic acid was insignificant. Thus, this plasticizer seems not to be suitable plasticizer active zein film. This work highlighted that LAE incorporation in zein film with glycerol can be used as a renewable active packaging for improving the safety and shelf-life of foodstuff.
