Abstract:
One of the critical limitations to the use of lactic acid bacteria bacteriocins as a substitute for chemical antibiotics is the narrow spectrum of their antibacterial activity. The objective of this study was isolation and molecular identification of bacteriocin producing Enterococcus with a broad antibacterial spectrum.In this study bacteriocin producing bacteria were isolated from native dairies in Zarand, Kerman. Bacteriocins were purified by sulfate ammonium method. The effects of the produced bacteriocins on different indicator gram negative and positive strains were investigated. The isolate that produced the most bacteriocin, identified according to the molecular tests.The initial isolation yielded a total of 15 bacteriocin producing Enterococcus strains. Enterococcus faecium C2 (isolated from native cheese) produced bacteriocin with the most antibacterial activity.The maximum bacteriocide effect was observed against Listeria monocytogenes and Pseudomonas aeruginosa. In conclusion, the produced bacteriocin had a broad antibacterial activity against the gram positive and gram negative bacteria, particularly pathogenic bacteria, its use as substitute for chemical antibiotics and bio-perservative in food industry is recommended
