Abstract:

For the use of healthy and nutritious food, it is necessary that human provides the necessary measures for food preservation and maintaining its nutritional value. Food preservation is possible by preventing the growth of bacteria, fungi and other microorganisms, which lead to food contamination. The effective factors on contamination of food, sometimes directly, sometimes indirectly, for example, creating the suitable conditions for other factors activity leads to contamination and different diseases in humans. It is possible that food products may become contaminated in many ways from the beginning due to contact with soil and water, and thus, with bacteria (primary contamination), or in one of the stages of production to maintenance, and during the consumption (secondary contamination). We should identify the following in order to prevent diseases that are caused by consumption of contaminated foods, such as food poisoning, parasitic diseases: food, ways that lead to food contamination, their maintenance procedures, and principles of fighting germs and pathogens.
