Abstract:
Food is one of the most important factors for growth and survival. One of the food items that can contain most of the body s needs is fish and, in general, aquatic animals. Nowadays, given the increasing awareness of the importance of nutrition in protecting human health, consumers make informed choices about nutrition in terms of their nutritional value. High scattering of heavy metals on the surface of the earth, their various uses, and especially the toxic properties of these metals, have made this group of metals one of the most important environmental pollutants. Heavy metals may accumulate in aquatic organisms, including fish, and pose a potential hazard to the health of the ecosystem and living organisms. After entering the canvas of heavy metals, heavy metals accumulate in the Textures and organs of aquatic animals, and eventually enter the food chain. As the fish form part of the human diet, these heavy metals can enter the human body through the feeding of infected fish. Heavy metals have caused concern about the use of fish due to various negative effects such as growth retardation, altered behavior, genetic variations, and mortality in aquatic animals, as well as toxicity and tendency to accumulate in the food chain. Therefore, it is important to measure the concentration of these metals in order to determine the standards of public health and marine environment protection.
