Abstract:

The present study aimed at development of a value-added product from a discarded or underutilized marine source. For this purpose, discarded or underutilized roe from common carp caught from Caspian Sea was obtained and the roe was subjected to oil extraction. Moreover, the proximate and amino acid composition of common carp roe was measured in order to provide a better overview of its content. The results of this study indicated that common carp roe can be considered a source of essential amino acids with high content of protein. Also, the results revealed that the oil extracted from the roe contains high amount of polyunsaturated fatty acids which can be used in human diet if measures are taken to reduce or retard oil oxidation. It is concluded that technologies like oil extraction can be adopted in order to develop value-added products from underutilized marine resources. However, technological barriers and cost effectiveness should be taken into account in order to operationalize the production of value-added products from marine resources in industrial scale.
