Abstract:

Introduction: Campylobacter is a hard_growing bacill that among its ۱۸ species, two species, Campylobacter jejuni and Campylobacter coli are the most important cause of gastroenteritis in humans. Due to the high consumption of chicken in human and the importance of poultry as the main factor in the transmission of Campylobacterto humans, the need for quality control steps of chicken meat production is increasing. Materials and methods: To investigate the prevalence of Campylobacter, ۱۰۰ samples of broiler liver from two slaughterhouses in Mashhad were collected randomly and sent to the laboratory under sterile conditions with ice. Then, by homogenizing each sample, add ۱۰g of it to ۹۰ml of Campylobacter enrichment broth containing the selected supplement of Campylobacter and sheep defibrillated blood, and after ۲۴ hours of home warming, we cultured ۰.۱ml of it on the selected culture medium of Campylobacter containing antibiotics and defibrillated blood of sheep and kept it in home warming for ۴۸ hours. then we examined the resulting colonies for Gram staining, Catalase. Oxidase, Hyporat hydrolysis and Cephalothin resistance Results: In this study, out of ۱۰۰ samples taken, ۴۱% were positive for Campylobacter. In other reports conducted in Isfahan, Shahrekord, Kerman, Tehran, the prevalence of campylobacter is ۴۹.۳%, ۷۸.۳%, ۱۱.۱% and ۶۳%, respectively. In some areas, the pollution even reaches ۱۰۰%. Which doubled the need for further study in this field. Discussion: In the studies performed, there are significant differences with the studies of this study, which can be attributed to the sampled tissue, geographical area, season, sampling errors and culture. Due to the prevalence of Campylobacter transmission through the consumption of undercooked chicken, it is recommended to cook this meat completely.
