Abstract:

This study evaluated various properties of the Moringa peregrina seed kernel, cold press extracted oil, and in vitro α-glucosidase and α-amylase inhibitory activity of the seed. The findings of this study showed that compared to most conventional oilseeds such as cotton, soybean, and sunflower, Moringa peregrina seed kernel contains higher contents of fat (۵۴.۶۱%) and protein (۲۵.۲۷%). The oil, which has high oxidative stability, can also be categorized as a high MUFA: SFA ratio oil. M. peregrina seed kernel was shown to be an inhibitor of α-amylase. This study showed that M. peregrina seed is a rich source of protein and oil with glycemic control properties. This indicates its potential as a natural functional ingredient for various food formulations. Meanwhile, M.peregrina can become a significant source of income for the local communities in the arid and semi-arid regions, due to the potential of its seed oil as an ideal alternative for olive oil.
