Abstract:
In this study, oil was extracted from the liver and visceral fat of Patin (Pangasianodon hypophthalmus) and refined. The yield of oil after refining was ۴۹.۹۸%. The major yield loss (۳۴.۲۰%) happened during the degumming procedure. Fatty acids found in the crude and refined oil were C۱۲:۰, C۱۴:۰, C۱۴:۱, C۱۶:۰, C۱۶:۱, C۱۸:۰, C۱۸:۱, C۱۸:۲, C۱۸:۳, C۱۸:۴, C۲۰:۰, C۲۰:۱, C۲۰:۴, C۲۰:۵, and C۲۲:۶. The dominant saturated, monounsaturated and polyunsaturated fatty acids were C۱۶:۰, C۱۸:۱ n-۹, and C۱۸:۲ n-۶, respectively. The total amounts of monounsaturated fatty acids did not change significantly during refining procedure (p>۰.۰۵), whereas the total amount of saturated and polyunsaturated fatty acids changed significantly (p<۰.۰۵). The n-۳ to n-۶ ratios of crude, degummed, neutralized, bleached, and deodorized oils were ۱.۱۱, ۱.۰۶, ۱.۰۵, ۱.۰۲, and ۱.۰۱, respectively.
