Abstract:

Fructose is a six-carbon monosaccharide of C۶H۱۲O۶ and is an isomer of glucose and galactose. This ketosis is one of the three main fuels of the body and is used as a syrupin the food and pharmaceutical industries as the best alternative to sucrose. In this study, ۹۰ honey samples from honey shops in Mamasani city were prepared by random-cluster sampling method during spring (۴۵ samples) and summer ۱۴۰۰ (۴۵ samples) and after preparation were sent to the laboratory. The fructose of the samples was calculated based on the measurement of the amount of polarized light deflection by Bogdanov & Baumann method using a polarimetric device. ۵ of the spring samples and ۲ of the summer samples had more than ۵ g of fructose. The results showed that the absence of nectar and natural pollen during overwintering and beekeepers' use of sweet dough and homemade pollen cake, honey harvest before ripening, honey production method, overwintering management of colonies, climatic conditions of bee grazing area, Processing and storage conditions of honey, the source of honey nectar, overfeeding with sucrose and its derivatives, unsanitary storage conditions and excessive use of veterinary drugs, can affect the higher fructose content of spring honey compared to summer.
