Abstract:

Nowadays, the development of various industries and different environmental pollutions has brought many toxic and dangerous elements into the food cycle of human societies in different ways. Unfortunately, these elements have endangered the lives of humans and possibly other living organisms. While heavy metals enter the body, they will rarely excrete and they will precipitate into the tissues which can cause many complications and diseases.In this study, ۹۰ shrimp samples were collected during four fishing stages in the month of July, August, September, and October for ۲ consecutive years; in order to determine the accumulation of Mercury heavy metal in the edible tissues of Penaeus Vannamei shrimps in Bandar Abbas breeding farms.The Mercury measurement was performed using the cold steam method. The results indicate that theconcentration of Mercury metal in the edible tissues of the sampled shrimps weighed between ۰ to ۰.۰۰۷ mg/kg wet weight; according to World Health Organization (WHO), the standard wet weigh for Mercury metal is ۰.۱۷ mg/kg. Generally, the concentration of the Mercury metal in the edible tissue of sampled shrimps is much lower than the global standard and does not endanger the safety of residents and consumers.
