Abstract:
Filamentous fungi have long been used for production of a range of valuable products and enzymes and played animportant role in element cycling by degrading organic material. These microbial enzymes are since many decades used inmany foods processing and animal feed applications. The filamentous fungus, Aspergillus niger is an important and wellknown species of economically significant molds. Aspergillus niger is economically important as a fermentation organismused for the production of some enzymes like lipase. The lipases obtained from the genus Aspergillus especially Aspergillusniger present remarkable importance in biotechnological applications. Aspergillus niger is generally accepted as a nonpathogenicorganism. This review highlights the properties, safety and production of some enzymes from Aspergillus niger.
