Abstract:

In this study ability of two encapsulated probiotic bacteria (Lactobacillus acidofilus and Bifidobacterium bifidum) were evaluated to remove Aflatoxin M1 (AFM1) from simulated gastric model. The test was carried out in the presence and absence of probiotics. Bacteria were coated with sodium alginate beads with the objective of enhancing survival during exposure to the adverse conditions of the simulated gastric environment. Bacteria were incubated in simulated gastric model (containing 0.05, 0.25, 0.5 and 0.75 μg AFM1/l) for 0, 30, 60, 90 and 120 min at 37˚C. After centrifugation the concentration of AFM1 was determined in the supernatant fraction using ELISA technique. Results showed the binding abilities of AFM1 by Bifidobacterium bifidum and Lactobacillus acidofilus strains was 72.24±1.93% and 72±1.88%, respectively. There was not significant difference between Lactobacillus acidofilus strain and control (no bacteria) to eliminate toxin (p≥0.05). B.bifidum was known the best binder. The highest amount of toxin removal was seen when there was 0.75 μg/l AFM1 in gastric environment after 90 minutes of incubation time (84.38±0.3%).
