Abstract:
The free radicals are created in body by metabolism of some compounds or in food by heat, light and the other reactions can cause damages in body and food quality ,so for protecting the food and human’s health and due to the side effects of synthetic antioxidants, food industry noticed to the natural antioxidant, their sources and the appropriate method of extraction.so in this study the Different sources of antioxidant and some methods which are optimized antioxidant extractions were studied.
