Abstract:

Nisin has been used as a well-known antimicrobial agent in the food industry. However, its activity andstability in the food matrix is vulnerable to reduce. Protein/peptide immobilization onto nanoparticles is a usefultechnique to increase the operational stability of this safe-antimicrobial material. Uniformly sized mesoporous silicananoparticles (MSNs) with a mean diameter of 93±9 nm were prepared by template-removing method. The preparednanoparticles were amine and carboxyl-functionalized. Nisin was physically adsorbed onto the un-functionalized (MSNs)and carboxyl-functionalized silica particles (carboxyl-MSNs). In addition, the covalently attachment of nisin onto theamine-functionalized silica particles (amine-MSNs) was also studied. Nisin immobilization efficiencies onto MSNs,carboxyl-MSNs and amine-MSNs were measured to be about 57, 54 and 63%, respectively. Loading capacities of 570,540 and 630 mg g-1 were determined for MSNs, carboxyl-MSNs and amine-MSNs, respectively.
