Abstract:
Essential oils of some plants postpone corruption of fruits. In this study, the antimicrobial effect of thyme essential oilon a citrus putrefactive microbial flora is investigated. At first, the essential oil of thyme was extracted byhydrodistillation and analyzed by GC/MS. Carvacrol (69.76%) and thymol (21.37%) were found to be as mainconstituents. Subsequently, to demonstrate the antimicrobial effect of thyme oil, serial dilution of the culture mediumwas done. For increasing antimicrobial effect of this plant, Oil-in-water nanoemulsion was formulated using thyme oiland biopolymers such as whey protein isolate (WPI) and gum Arabic (GA) by ultrasound cavitation method. The particlesize distribution in the range of 7.80 to 66.55 nm obtained from DLS method. Also, effect of factors such as the particlesize ratio of protein to polysaccharide, protein concentration, polysaccharide concentration and ionic strength wereexamined.
