Alginate is a naturally occurring anionic polysaccharide obtained from seaweed. This impotentfactor in many medical applications widely used. Accordingly, in this paper, the Rheological properties ofalginate solution enriched with essential oil of Zataria multiflora have been investigated. Append of ZMOinto alginate emulsion led to some of special implications like: decrease in density, conductivity and particlesize and increase in pH, resistivity, zeta-potential and viscosity of the alginate solution. Changes in therheological and physico-chemical properties of alginate solution suggested the interaction between alginatemolecules and Zataria oil components. Zataria oil caused a significant increase in the antioxidant andantibacterial properties of alginate emulsion.
