Abstract:
Chitosan is one of the most important derivative of chitin biopolymer and that has great technological and commercial importance. Due to the antibacterial, biocompatible, edible and biodegradable biological properties to the addition like having a good absorbent properties to be used in numerous fields. Chitin and chitosan were produced from the structures of the edible mushroom (Agaricus bisporus). Fungi, have chitin in the cell wall, are abundant in nature and one of the most important decomposers organisms. Mushrooms can be picked from nature and cultivation on different composts. Chitosan was extracted and purified from the A. bisporus using NaOH and acetic acid treatments. The yields of extracted chitosan were 27.2 mg/g; fungal chitosan, had a degree of deacetylation of 75%. The produced chitosan materials were characterized using FTIR and SEM.
