خلاصه مقاله:
Polyphenols have been associated with the bioactive potential of grapes due to their beneficialhealth effects. For this reason, the aim of this study was to determine the content of bioactivecompounds (total phenolic, flavonoids, anthocyanins, and ascorbic acid contents) and in vitroantioxidant activities of selected vitis vinifera white seedless from Maragheh region, EastAzerbaijan, Iran. Antioxidant activities of the samples were determined by three testing systemsnamely DPPH, β-carotene/linoleic acid, and reducing power assays. In the DPPH system, thehighest radical scavenging activity was seen by the polar subfraction of the methanol extract infrozen fruits (IC05 = 35.67 ± 6.5 μg/ml). Comparison of two extraction methods, maceration andultrasonic, showed that the results of maceration is better than the ultrasonic. These advantagesare visible on extracting of the flavonoids, anthocyanins, total phenolic, ascorbic acid contentsand antioxidant capacity.
