Abstract:

Ochratoxins are a toxic secondary metabolite produced by fungi belonging to Aspergillus and Penicillium genera. Between several analogues of ochratoxins, OTA is the major compound found as a natural contaminant in plant material. OTA can contaminate a wide variety of foods especially agricultural commodities as a result of fungal growth in crops, in the field, during growth, at harvest, in storage and in shipment under favorable environmental conditions especially when they are not properly dried. The production of OTA is influenced by environmental conditions and nutritional requirements. Different environmental factors may influence the responses of different isolates of the same species in their growth and OTA production patterns. OTA is nephrotoxic, mutagenic, carcinogenic, teratogenic and immunosuppressive in a variety of animal species. OTA can be absorbed from the gastrointestinal tract. OTA has an acidic property and may be absorbed from stomach. Human exposure to OTA has been clearly demonstrated by its detection in human blood, urine and breast milk. OTA production is influenced by environmental factors such as water activity, temperature, kind of species, and, geographical regions indicating that moulds are likely to generate different amounts of OTA according to growth conditions. Water activity referred to as equilibrated relative humidity, is undoubtedly the most significant factor influencing on not only fungi growth but also OTA production in food products.
