In this research, new bone substitute cement composite was developed consisting of a chitosan oligosaccharide as an organic matrix in a liquid phase and inorganic mineral in a solid phase. The mineral component is composed of dicalcium phosphate dihydrate (DCPD) powder and the biological hydroxyapatite (HA) which is obtained by annealing Tuna fish bone at 600⁰C and 900⁰C. To study the possibility of the composite on repairing bone defects, the hybrid cements were immersed in simulated body fluid (SBF) for different intervals and the physicochemical properties were evaluated. The X-ray diffraction analysis was used to determine the conversion of the DCPD to hydroxyapatite. The attenuated total reflectance Fourier transform infrared spectroscopy (ATR-FTIR) and scanning electron microscope (SEM) for the composites confirmed the formation of needle-like apatite crystals on the composite surfaces after 28 days immersing in SBF. The Biological hydroxyapatite/chitosan composite is a potential repairing material for clinical application
