Abstract:

Many recent attempts have been made to create particulate systems based on hydrocolloidal nanocomplexes to obtain small vehicles for controlled delivery of bioactive agents. Having in mind that lipophilic active components (such as bioactive lipids, flavours, antimicrobials, antioxidants, nutraceuticals and drugs) need to be incorporated into aqueous media for suitable consumption in food and pharmaceutical applications, hydrocolloidal nanocomplexes have become one of the most convenient means of achieving this aim. These complexes are formed by the electrostatic interaction between cationic and anionic biopolymers in aqueous solution. They have numerous applications such as membranes, coatings, surfactants, and nanocapsules. The aim of this review is to study the hydrocolloidal nanocomplexes production and the mechanisms incorporate to the formation of the polyelectrolyte complex, which has demonstrated favourable characteristics for delivery systems
