In recent years the use of enzymes as biological catalysts in various industry sectors increased. Among the enzymes used in industry, amylase of the most important ones used today in biotechnology are highly regarded. These enzymes are molecules of starch into smaller polymers which are composed of glucose units are hydrolyzed. The most common form of industrial amylases, alpha-amylase are coming from different sources such as plants, animals and microorganisms derived And in various industrial sectors such as the food industry, textile, paper and detergent are used. Biotechnology also has some potential for industrial process that require less energy offers. This study aims to explore the potential of this enzyme-based technologies and new industries to promote it.
