Abstract:

The main objective of this study is to investigatethe inactivation efficacy of cold streamers in a sealedpackage on pathogenic fungi Aspergillus flavus (A. flavus)spores that artificially contaminated pistachio surface. Toproduce penetrating cold streamers, electric power supplywas adapted to deposit adequate power into the package.The plasma streamers were generated by an alternatinghigh voltage with carrier frequency of 12.5 kHz which wassuppressed by a modulated pulsed signal at frequency of110 Hz. The plasma exposition time was varied from 8 to18 min to show the effect of the plasma treatment onfungal clearance while the electrode and sample remainedat room temperature. This proved a positive effect of thecold streamers treatment on fungal clearance. Benefits ofdeactivation of fungal spores by streamers inside thepackage include no heating, short treatment time andadaptability to existing processes. Given its ability toensure the safety and longevity of food products, thistechnology has great potential for utilization in foodpackaging and processing industry. In this study, moistureand pH changes of pistachio samples after plasmastreamers treatment were also investigated.
