Abstract:
Green tiger shrimp (Penaeus semisulcatus), an important shrimp species in Persian Gulf, has low fat content and a high percentage of n-3 polyunsaturated fatty acids (PUFA). These fatty acids are beneficial for protecting against cardiovascular diseases, depression and some cancer forms. In the present study, fatty acid level and lipid content of Penaeus semisulcatus were investigated during cold and warm seasons. A total of 30 shrimp samples were caught off the coast of Persian Gulf in Bushehr during summer andwinter and transferred to the laboratory in icebox. Gas chromatography was used for determining the composition of fatty acids. Additionally, lipid content was assayed by Soxhlet s extraction using n-hexan solvent. The results revealed the level of polyunsaturated fatty acids to be 48.94% and 46.83% during cold and warm seasons, respectively. Moreover, lipid level were 0.48% and 0.17% during cold and warm seasons, respectively. Thus, Penaeus semisulcatus was significantly higher in n-3 fat during cold seasons compared to warm seasons. There were no significant differences in saturated fatty acid (SFA) and monounsaturated fatty acid (MUFA) between cold and warm seasons (P> 0.05). This study showed, Penaeus semisulcatus is a good source of Omega-3 long-chain PUFA in human diet during cold months
