Abstract:

National Nutrition and Food Technology Research Institute, Faculty of Nutrition Sciences and Food Technology, Shahid Behesty University of Medical Sciences, Tehra- IranMeat is lost and waste in supply chain globally, from initial agricultural production down to final household consumption. Meat losses is consist of Meat Lost (ML) refer to the decrease in edible meat mass throughout production, post-harvest and processing stages in the meat supply chain and Meat Waste (MW) take place at the end of the value chain through retail and final consumption, which relates to retailers’ and consumers’ knowledge and behavior.The United Nation’s Food and Agriculture Organization (FAO) estimates that 20 present of global meat production is either wasted or goes uneaten but base on current reseach in Iran the amount of meat losses is less than international average report, about 300 000 metric ton per year through the chain. Although reducing loss and waste requires changes in consumer and retailers habits and approaches, It is obvious that correction actions at harvest and even pre-harvest such as implementation good breeding practices (GBP) in farms and food safety management systems (FSMS) and sanitary conditions during meat production, processing, storage and distribution are key points to reduce contamination and assuring the final product is fit for human consumption. Also due to improper technical practices a part of meat and meat product could loss, therefore applying best practices base on hygienic and technical principles in meat processing sits reduce meat lost and waste significantly.
