ESTIMATING THE IODINE CONTENT OF SALT BY THE IODOMETRIC TITRATION TEST METHOD IN THE URBAN AREAS OF SHIRAZ

Abstract:
Background and Aim: Universal salt iodization is a WHO recommendation to control iodine deficiency. A common way to monitor iodine nutrition is to assess the iodine content of household salt. The aim of this study is to estimate the iodine content of the salt consumed by people living in the urban areas of Shiraz.Methods: In this cross-sectional study, the iodine content of 698 salt samples was tested by the dieticians working at the health centers in the rural areas of Shiraz. They tested the salt samples by iodometric titration test method, by checking the data on salt packages, and also by asking questions concerning the time of adding salt to food when cooking as well as the way of storing the salt.Results: 582 (83.38%) of the salt samples were fortified by iodine but 116 (16.61%) didn’t contain any. Moreover, 50 (7.54%) of the samples were without iodine while it was stated on their package to contain iodine. Furthermore, the Storing conditions were wrong by 210 (30.08%) of the families and 422 (60.45%) of them didn’t add salt at an appropriate time while cooking.Conclusion: Although most of the families consume iodized salt, it would be better to teach them the best way of storing the salt and the time of adding it to food when cooking.
