Abstract:

Background and Aim: The Effect of Polypropylene Containing Nano -hydroxyapatite on vitamin C of Fresh Cut Cabbage in Modified Atmosphere Packaging Methods: In this study, the effect of packaging with film containing nano-hydroxyapatite particles on physicochemical characteristics of cabbage slices was investigated. Having been washed and disinfected, cabbage slices were packaged in 130-gram polypropylene (control sample) and polypropylene containing 1 and 3 percent Nano particles .The effect of Nano-hydroxyapatite particles (1 and 3 percent) and time (1, 3, 6, 9 and12 days) were studied in 3 replications in completely randomized design. The packets were then stored at 4 ° C .Vitamin C was evaluated on days 1, 3, 6, 9 and12 days in three replicates. The data were analyzed using a completely randomized design with factorial design with SASResults: The effect of nanoparticle concentration and time on vitamin C was significant at the level of 0.01 in cabbage samples. Comparison results show the average effect of nanoparticles on vitamin C. The results of the comparison showed that the highest amount of vitamin C was observed in 3% concentration of nanoparticles.Conclusion: Using modified atmosphere could help to maintain vitamin C and from there There was no significant difference between the packets containing nanoparticles concentration and the control sample in the modified atmosphere for all packets.
