Abstract:

Cancer starts when cells in the body begin to growout of control. Nearly cells can become cancer in anypart of the body, and can spread to other areas ofthe body; Unfortunately, Cancer is one of the majorcauses of morbidity and death globally. Colorectalcancer (CRC) is a term for cancer that starts in eitherthe colon or the rectum. Colorectal cancer is amongthe top 5 cancers most commonly diagnosed in bothmen and women alike (1). In the West of world,colorectal cancer is the third leading cause of cancerdeath in each sex and second cause in men andwomen combined. Colorectal cancer has 3th rank inboth cancer incidence and mortality in the US (2).A diet low in fruits and vegetables, and high inanimal red meat and saturated fat, appearedassociated with CRC. This is consistent with thereported CRC researches in developed countriesindicating universal causal effects for this tumor type(3). And western diet is well example for this matter.Colorectal cancers is prevalent in industrializednations ;On the other hand increasing trend ofcolorectal cancer occurrence has been reported inemigrants to industrialized countries alsoresearchers explained younger women are morehigh-risk than others (4). These information highlightthe significance of life style effects on colorectalcarcinogenesis such as diet change. That diet oftenchanges proceed to the western diet or similar. Oneof indexes of western diet is frying foods on a flatpan using cooking oil to lubricate the frying pan orgrilling directly; On the other hand, Heterocyclicamines (HCAs) are formed when meat of muscle ,such as beef, pork, fish, or poultry, are cooked usinghigh-temperature methods (e.g., pan frying andgrilling directly over an open flame) (5). Studiesindicated that higher intake of total or type-specificHCA are positively associated with tumors inductionin colon and rectum and increasing of colorectaladenoma risk (6,7). Whilst. researchers wasconfirmed that there is no association betweencolorectal cancer risk and the consumption of fruitand vegetables rather high intakes of fruit andvegetables have a favourable effects on the risk ofcolorectal cancer (8).So, past and present studies showed that eatingvegetables and fruits can prevention fromprevalence colorectal cancer, whilst high westerndiet intake is an important risk factor for developingcolorectal cancer because these materials arecontaining of high HCA amount. Finally, conclusion isthat colorectal cancer will develop if people arewestern diet willing.Unfortunately, we ve this diet in emigrants toindustrialized countries or people whom arerequesting this dietary model in present course thatthis s very serious and dangerous problem. So,perfect education has a substantial role and it snecessary.
