With the development of sugar beet, its tissues experience numberious physiological changes which emerge from water accumulation and cell division and development. In this present study, the sugar beet at five various stages of sugar beet development, from three weeks after sowing to eleven weeks, were imaged using diffusion tensor and longitional relaxation MRI acquisition protocols. The diffusion pattern in the beet tissue begins to change from the seventh week to the crown part, reflecting the start of the sucrose storage process. Longitional relaxation images indicated Unicent circles patterns will be revealed from the third week. The sum of water begins to reduce from the seventh week, showing change in tissue at this time. diffusion tensor image of sugar beet showed that the technique is applicable to tissues with high water content. This present study indicated that MRI diffusion technique play an important role in studying the development process of plants, such as sugar beet. Moreover, these changes in sugar beet tissue structure during sugar beet growth can be seen. In order to further examine, it is recommended that this non-invasive method be tested on other plants.
