Attempts to mimic human senses of smell and taste by electronic means are called machine Olfaction or electronic nose. Among the numerous applications of electronic nose technology, the analysis of foodstuff is one of the most promising, and also the most traveled road towards industrial applications for this technology. Because human senses are strongly involved in an individual’s interaction with foods, the analysis of food provides an excellent field to compare the performances of natural and artificial olfaction systems. Because the electronic nose is non-destructive and directly correlates, in principle, to the way the consumer perceives food products, it is a good candidate for use as an evaluation tool for quality assessment.Electronic noses have the potential to prepare new ground for non-invasive on-line monitoring of biological processes. In this article we discuss about their construction and applicability for food processing.Studies on bioprocess monitoring shows that the odor of cell cultures can provide the bioprocess operator with valuable information on cell and process state changes. The other use of electronic noses are at-line for monitoring industrial processes in the food and feed industry. For both applications implementation of electronic noses represents a cost-effective tool for rapid assessment of the chemical and microbial status of raw materials, process streams and end products.Electronical nose include of gas sensor array technology combined with multivariate data processing methods and demonstrates a promising potential for rapid, non-destructive analysis of food. Sensors are the most crucial components in a machine olfaction system. Signal conditioning, data acquisition, data, data processing and pattern recognition are the crucial modules of an olfactory sensing system.This paper briefly discusses the progress in the field of electronic nose technology.
