Abstract:
In this research , thermodynamic properties of water-glucose solution , which has important applications in the food industry, were investigated with the help of NRTL and UNIFAC thermodynamic models. The adjustable parameters of these models were calculated by MATLAB software and in this way properties such as activity coefficient and water activity, water vapor pressure in the solution, osmotic pressure of the solution and boiling temperature of the sugar solution were obtained. By comparing the results obtained from NRTL and UNIFAC thermodynamic models with the values measured in the laboratory, it was found that the mentioned models are accurate enough to calculate the thermodynamic properties of water-glucose binary sugar solution at moderate concentrations.
