Abstract:

شیر و فرآورده­های آن سرشار از ترکیبات زیست­فعال و فراسودمند هستند. اغلب این ترکیبات در برابر حرارت ناپایدار هستند. بنابراین فرآیندهای حرارتی رایج می­توانند تاثیر مخربی برکیفیت تغذیه­ای شیر و فرآورده­های آن داشته باشند. از­این­رو فرآیندهای غیرحرارتی توجه بسیاری از محققان را به خود جلب کرده­اند. فرآیند فشار بالا یکی از فرآیندهایغیرحرارتی نوین است که در زمینه افزایش ماندگاری شیر و فرآورده­های لبنی مورد پژوهش­های متعددی قرار گرفته است و نتایج نوید­بخشی به همراه داشته است.هدف از مقاله حاضر، مرور مطالعات  انجام­گرفته در زمینه اثرات فرآیند فشار بالا بر شیر و فرآورده­های لبنی است. طبق نتایج پژوهش­های انجام­گرفته، فرآیند فشار بالا قابلیت تغییر ساختار ترکیبات شیر از جمله پروتئین­ها و گلبول­های چربی را دارد. همچنین فرآیند فشار بالا می­تواند ضمن حفظ مواد مغذی و ترکیبات مولد عطر و طعم، موجب غیرفعال­شدن میکروارگانیسم­های فسادزا و بیماری­زا، افزایش بازدهی و بهبود ویژگی­های رئولوژیکی و حسی شیر و فرآورده­های آن شود.
