Abstract:
Chemical properties (moisture, pH, acidity, regenerating sugars, sucrose) and ash, fructose toglucose ratio, electrical conductivity and hydroxymethylfurfural, proline, biochemical (diastaseactivity), physical (viscosity and color), sensory properties (color, aroma, taste, generalacceptability) of honey were tested. The practical stages of this research were carried out in thefall of ۲۰۲۰ in an apiary in Siahbil village, Talesh county, Guilan province. This project included۶ treatments and each treatment included ۵ hives. At the beginning, aqueous extract of echiumamoenum and hibiscus sabdariffa were prepared. Based on the results obtained from differenthoney samples, honey treated with ۱۰۰% echium amoenum scored higher in terms ofphysicochemical properties and has more nutritional value and higher marketability. But the honeytreated with ۱۰۰% hibiscus sabdariffa got the lowest score for nutritional value and marketability.
