Abstract:

Despite the increase in the variety of consumer foods and the diversity of nutrition culture, meat is a common food and the main source of protein. Today, especially in urban societies, meat products such as sausages and sausages have a special place in the diet of people around the world. Therefore, it is necessary to pay attention to the health and safety of meat and its products. Considering the relatively high price of meat, the possibility of cheating and replacing other livestock species in these food products is not out of mind. Food fraud from three health aspects (threat to community health); It is economically, socially and culturally important. Therefore, quality and health monitoring institutions in the society should deal with this issue with different and precise methods. Our aim in this review study is to investigate illegal tissues in meat products.
