Abstract:
The available statistics confirms the increase of annual export of tomato paste from Iran, whereas its import has simultaneously stopped at official sites of the country. This clearly represents the dynamic market for tomato paste in our country. Unfortunately many factories in the Fars province, store the bulk paste inside large barrels under non-aseptic conditions. Therefore a significant amount of stored paste is corrupted. Salt spraying on the product surface is currently used to prevent the growth of fungi. However, during cooling in the open ambient suitable conditions for the growth of various types of fungi and yeasts are provided. For better understanding of this situation, field sampling from one of the factories in Fars province was done in this study. Then the fungal samples were purified and their types were identified. Saccharomyces Cerevisiae was one of the main contaminating fungi in this project. Its growth in the culture media was delayed and controlled from rapid growth in few hours for the pure sample to three days in the media enhanced with essential Satureja Bachtiarica Bunge. This could be attributed to the presence of Carvacrol and that was confirmed with CG-MS tests
