Abstract:

Consumption of tomato and tomato products is positively related to the reduction incardiovascular disease and several types of cancer, thanks to the presence of natural compounds, such asantioxidants. The tomato processing industry generates high amounts of waste, mainly tomato skins andseeds, which create environmental problems. These residues are attractive sources of valuable bioactivecomponents and pigments. In the tomato processing industry approximately, 8.5 million tons of wastesare generated globally, each year. The present study highlights the valuable bioactive constituents aslycopene, beta-carotene, protein, amino acid, Fatty acids and polyoeneol from the by-products of tomatoprocessing industries, which can be revalorized as incorporated nutrients in functional foods.
