Evaluation of fatty acids composition in two fish species from waters of Persian Gulf (Bushehr, Iran)

Abstract:

The presence of polyunsaturated fatty acids (PUFA), especially ω-۳ and ω-۶ in the human diet is essential; due to these compounds prevent disease. Fish tissue is the main source of PUFA. Therefore, the consumption of fish in human nutrition is very important. In this study, fatty acids in two fish species (Scomberomorus Commerson and Otolithes Ruber) were evaluated. These species had been sampling from Persian Gulf Northwest coasts of Iran (Bushehr: N۵۰o ۵۱', E۲۸o ۵۹').The obtained results showed that these two species are a good source of poly unsaturated fatty acids (PUFAs), especially omega-۳. The sequence of fatty acids in tissues of two species was as following: saturated fatty acids% (SFA %) >mono saturated fatty acids% (MUFA%) > poly unsaturated fatty acids% (PUFA%). Also, there was a significant difference between the magnitudes of fatty acids in two species (p<۰.۰۵). Scomberomorus Commerson higher PUFA% and lower SFA% and MUFA% in comparison to Otolithes Ruber. Because of ω-۳ fatty acid compound and ω-۶/ω-۳ ratio, lipid from these species is a valuable source for human consumption.
