Abstract:
Electronic tongue technology has shown a promising perspective in relation to quality control and identifying the authenticity of food and agricultural products, so this technology has been widely used in food and agricultural industries. A portable electronic tongue system consisting of an array of electrochemical sensors has promising applications in adulteration detection. In the measurement process, voltammetry techniques are used. Phosphate buffer (pH=۷) is used as a suitable buffer medium for detection. Also, graphite-based compounds have the best performance as electrode surface modifiers. The three-electrode sensing system, including the working electrode, silver/silver chloride reference electrode, and auxiliary electrode, has a high ability to detect adulteration in the food industry. Compared with traditional gas chromatography–mass spectrometry (GC-MS) techniques, electronic tongues are rapid, reliable, and cost-effective option
