A review of biofilm importance in food industry and the harmful effects related to their presence and its control strategies. The importance of biofilms in most food processes has been raised as an important issue. Biofilms are a collection of microorganisms that can form quickly in food industry environments. Biofilms adhere to a solid surface in groups and are surrounded by an extracellular matrix and they exist everywhere in nature. Studies have shown that biofilms can cause severe problems in the food industry. Overall, this review shows the real threat of biofilms in the food industry due to the resistance to disinfectants and the mechanisms developed for their survival and the promising technology of ozonated water on biofilm inhibition.
