Investigation of antioxidant activity of Lactobacillus plantarum ATCC 14917 abstract
The role of probiotics has been noticed in recent decades as factors that improve human health. Probiotics as natural antioxidants can play a role in regulating antioxidant activities by chelating metal ions and reducing enzymes that produce reactive oxygen species (ROS). Oxidative stress is caused by an imbalance between oxidant defense and reactive oxygen species and causes damage to cells and tissues. In this study, we investigated the ability of Lactobacillus plantarum (L.p) to scavenge DPPH and ABTS radicals at different concentrations. Also, the morphology of the bacteria was examined with a scanning electron microscope (SEM). The results show that the highest percentage of DPPH and ABTS free radical inhibition is 78.80% ± 0.007 and 56.49% ± 0.0005, respectively. L.p has a high potential in reducing free radicals.
