Abstract:

Email: yarmahmoodi@gmail.com Postbiotics are bioactive metabolites of probiotics that offer a suitable alternative to chemical preservatives. This review investigates the antimicrobial and antioxidant mechanisms of postbiotics derived from lactobacilli of traditional Iranian dairy products and their application in edible films based on native seed mucilages (balangu, sage, quince). Findings indicate that these films extend the shelf life of meat and seafood products by reducing microbial load and lipid oxidation. The combination of native postbiotics with Iranian seed mucilages represents an effective strategy for active biodegradable packaging.
