Abstract:
Flavonoids, anthocyanins, antioxidant capability, total phenolic and ascorbic acid contents, ofCornus mas frozen and dried fruits for polar and non -polar subfraction were evaluated in thiswork. Antioxidant activities of the samples were determined by three testing systems namelyDPPH, β-carotene/linoleic acid, and reducing power assay. In the DPPH system, the highestradical scavenging activity was seen by the polar subfraction of the methanol extract in frozenfruits (IC50 = 25.15 ± 6.5 μgm/l). Comparison of two methods of extraction, maceration andultrasonic, showed that the results of maceration is better than the ultrasonic. These advantagesare visible on extracting of the flavonoids, anthocyanins, antioxidant capability, total phenolicand ascorbic acid contents.
