Abstract:

Density and sound velocity of carbohydrates such as glucose, fructose and sucrose in water and in aqueoussolutions 10% w/w of polymer of PPG400, PEG400 at T = (288.15, 293.15, 298.15,303.15 and 308.15) K have beenmeasured. From the experimental density and sound velocity data, isentropic compressibility values of solvent andaqueous solution of polymer-carbohydrate have been obtained and by using them, hydration number of carbohydrateswere calculated. Apparent molar properties such as apparent molar volume, and apparent molar isentropiccompressibility of carbohydrates were calculated and discussed about sweet property of carbohydrates. All results arediscussed based on locations and type of interaction of OH groups in carbohydrate molecules.
