Nano-Structured ZnO in Food Packaging SystemsAgainst Escherichia coli O157:H7 abstract

ZnO nanoparticles were synthesized via microwave-assisted solution combustion method. Product was mixed with low-density polyethylene (LDPE) at 0.5%, 1% and 2% (w/w) to form films. Then, the antibacterial properties of the ZnO-LPDE films on Escherichia coli PTCC1330 were investigated. Results showed that the spherical ZnO particles were synthesized with average size of 35 nm. Moreover, ZnO-LPDE films showed antibacterial impacts at any concentration. The antibacterial impact is decreased when concentration increase related to the agglomeration of the particles at higher concentration. The antibacterial activities explained by the release of Zn+2 ions and H2O2 ions from the surface of the particles
