Analysis of Inhibitory Interaction between Green Tea Polyphenol (EGCG) and the Liver Enzymes

In the present study, the catechin binding efficacy and the effect of epigallocatechin-3-gallate (EGCG), green tea polyphenol, on the conformation of two gluconeogenesis enzymes, alanine aminotransferase (ALT) and aspartate aminotransferase (AST) were investigated using molecular docking studies. According to the results, this research provides new information about the interaction mechanism of EGCG, which may be beneficial to the development of functional foods to prevent fatty liver.
