Abstract:
Biosensors have been widely considered in the field of food processing, safety and quality control. Among biosensors, the electrochemical type is of particular importance due to its advantages such as low detection limit, short response time, long-term stability, miniaturization, low cost, ease of use, high sensitivity and selectivity, so that they can detect very small amounts of biomolecules in a short time. Nanobiotechnology in the field of electrochemical biosensors is a new method for building reliable and easy monitoring systems in food. Nanomaterials are used in the design of biosensors by creating optical, electrical, magnetic, mechanical and thermal properties. In this article, the structure and classification of electrochemical biosensors, the use of nanomaterials and the application of electrochemical biosensors in the food industry were reviewed.
