Cereal malts are essential ingredients in the brewing and food industries, contributing to the flavor, color, andnutritional value of various products. Cereal malt is a crucial ingredient in the production of various food and beverageproducts, particularly in brewing and distilling industries .This review explores the types of cereal malts, theirproduction processes, and their applications. Emphasis is placed on the biochemical changes during malting and theimpact on the final product quality. Recent advancements in malting technology, future trends, the benefits andchallenges associated with cereal malt production are also discussed.
