Abstract:

Encapsulation of ᾳ-Tocopherol for increasing it’s resistance in front of light, oxygen, temperature is very important. In this study ᾳ-tocopherol is encapsulated bygelatin, pectin with complex coacervation. Four parameters such as (gelatin, pectin, ᾳ-tocopherol, homogenization speed, PH of soloution) were investigated in Nanocapsules size. Increasing of biopolymer rand speed of homogenizer and α- tocopherol cause in increasing of size and increasing of PH cause decreasing of size.
