Radical scavenging activity of three soybean cultivars abstract
One of the main achievements of the modern health-conscious lifestyle is the growing interest in medicine, dietary supplements and food additives of natural origin, such as plant extracts, which contain large amounts of antioxidants or vitamins, depending on the source of the plant organs. Antioxidant or DPPH radical scavenging activity of root and leaf of three soybean cultivars (Caspian, Sari, 1801) was investigated. As solvents, methanol, propanol were used. The antioxidant activity of the extract with methanol solvent was higher than that of propanol. Also, this activity in the leaf was more than the root. The highest activity was observed in cultivar Sari . So, methanolic extract of cultivar Sari leaf had the lowest IC50.
