Abstract:

Isoamyl acetate is one of the most important flavor compounds used in food industries because of its characteristic banana flavor. The esterification reaction of isoamyl alchohol with acetic acid has beenstudied in the presence of different ion-exchange resins. The optimization of various parametersaffecting the synthesis of ester in presence of microwave was done. Effects of various parameters such as mole ratio of reactants and catalyst loading, and reusability of the catalyst were studied to optimize the reaction condition. Physical characteristic of the catalyst was studied by scanning electronmicroscopy. Substrate molar ratio of 1:2 acetic acid:isoamyl alcohol and 2 W/W% Amberlyst 15 leads to 92.66% conversion at 80 ◦C in 90 min
